Eat the yolk!

I imagine as I get more comfortable with the technology and the idea of blogging, I will do this on a more regular schedule.  For now I am taking inspiration where it happens.

 

The other day a client told me they had a conversation with their roommate, where the roommate commented that eating 5 eggs is too much fat.

Now first, biases up front.  I do not believe in limiting fat intake.  I do believe in being specific about the sources of fat.  Vegetable oil, canola (or rapeseed) oil, margarine, I have them avoid whenever possible.  but if they are eating:

Avocado

Coconut Oil

Cold Pressed Olive Oil

Flax Seed/ Flax Seed Oil

Natural Peanut Butter

Olives

Pecans

Raw Almonds/ almond Butter

Sunflower or Pumpkin Seeds


I’m not going to be too concerned.

Why is there still such a stigma or fear of eggs.  Granted, salmonella is concerning, but outside of that IMO there is no logical reason for an egg white omelette.  If you are going to have eggs, have eggs.

 

Egg yolks contain a myriad of nutrients that are good for you.  Choline, Lutein, Zeaxanthin.  And I have yet to see any research that has ever shown that people who eat more eggs have more heart attacks than people who eat few eggs.

 

So eat them, enjoy them!  Unless of course your a vegan in which case just keep enjoying your avocado and coconut.  🙂
